There aren't many things more beautiful than a family Easter table filled with homemade recipes and cute Easter desserts and treats.  Easter lunches and dinners bring back so many memories from my childhood.  After church, we would head to my grandmother's home where the table would be filled with home cooked foods and so many desserts and treats.  The kitchen table, living room, and den was packed with aunts, uncles, and cousins all enjoying special recipes while laughing at various stories told every year but always just as funny as the first time we heard them.  I can still hear the laughter.  There was always lots of laughter.  I miss those days.  My grandparents are all in Heaven now and I don't see my cousins, aunts, and uncles as often as I would like, but we can carry on some of our childhood traditions in our own homes as our own adult children and grandchildren gather around our own tables.  If you're wondering what to desserts and treats to prepare for your Easter table this year, I've compiled a list to get us started.

I've seen different variations of dirt cakes in the past.  I've even made a few with flower pots for bowls and gummy worms for the "dirt" mix.  For your Easter table, try this Easter Dirt Cup variation of this cute yummy treat.  Instead of gummy worms, use little candy eggs and bunny Peeps.

Are you a cheese cake lover?  These mini cheesecakes are adorable.  The crust is a cookie, but the best part is that there is no baking required!

1.  Trail Mix always makes a good snack, but it's more fun to eat it with a St. Patrick's Day twist.  Sarah and Jessica over at Pretty Providence share their recipe that only requires 3 ingredients.  Take a look here and give it a try.  You can change out the candy colors to coordinate with any holiday or special event theme.

Mema’s Chocolate Oatmeal No-Bake Cookies


No one could make desserts better than my grandmother (we called her Mema).  I am blessed to be the first of fourteen cousins and when we were younger, we all gathered at Mema’s house often.  At Mema’s house, we could always count on lots of food including the best desserts ever made.  One of my favorites was her chocolate oatmeal no-bake cookies.  It is a simple recipe with no secret ingredients, but it does take a little bit of practice to get them just right.
 
Ingredients:

2 Cups Sugar
1/2 Cup Milk
1 Stick Butter
1/4 Cup Cocoa
1 and 1/2 Cups Quick One-Minute Oatmeal (I use Quaker)
1 Teaspoon Vanilla Flavoring
1/4 Cup Peanut Butter

Directions:  In a boiler, add sugar, butter, milk, and cocoa.  Bring the mixture to a boil, stirring constantly.  Once the mixture reaches the boiling point, reduce heat from high to medium-high and continue stirring for another 1 min. 30 seconds.  At the sound of the timer, remove from heat and add peanut butter immediately.  Stir in the peanut butter quickly.  Add vanilla.  Then add the oatmeal.  Stir quickly as the mixture will begin to harden immediately. Spoon onto aluminum foil and allow the cookies to cool.  Enjoy with a tall glass of cold milk.

Tips:  These cookies can be tricky.  If they turn out too firm, try adding less oatmeal.  If they don’t harden at all, add more oatmeal.  If you still have trouble getting them to turn out just right, adjust the amount of peanut butter.  They also turn out differently, depending on the humidity.  The trick is to experiment with the recipe until you get it just right.

How to Make a Chocolate Cobbler


I rarely think about my grandmother without thinking about the foods she cooked.  She had 6 living children and 15 grandchildren, yet she knew everyone's favorite foods.  Savory, sweet, or both, my grandmother remembered our favorites.  If she knew I was coming to visit, she would have her wet coconut cake already made, and then we would make her chocolate oatmeal no-bake cookies together.  For my dad, she would make a German chocolate cake.  For other family members, she would make cracklin' cornbread, homegrown green beans, and any other combinations of everyone's favorites.  If we were all coming, she would have it all.  Growing up in the southern United States definitely had its advantages, and one of those advantages is southern cooking made straight from the hearts of our grandmothers.  From corn on the cob to cobblers, we love it all.

Speaking of cobblers, I'm sure you're familiar with Peach Cobbler and Apple Cobbler, but did you know there is also a Chocolate Cobbler?  I had never heard of a chocolate cobbler until recently.  Someone brought one to a family gathering.  It looked way too good to pass up (like I would ever pass up chocolate).  I was determined to learn how to make one, but I wondered how the center stays pudding-like while the outside bakes like a cake.  I'm really not that much of a cook, so I wasn't sure I could pull it off.  Well, I did, and it was amazing.

This recipe is easy to follow.  You'll be enjoying your own homemade Chocolate Cobbler in no time at all.

Are you a chocolate lover?  If so, you're in the right place!  I am thrilled to share with you an incredible dessert that is sure to satisfy your sweet tooth.  It's a Chocolate Cobbler that is not only delicious but also easy to make.  This recipe is perfect for those who want to treat themselves to a decadent dessert without spending hours in the kitchen.  So, without further ado, let's dive into this scrumptious recipe.

The first step in making any recipe is gathering all the necessary ingredients.  Here's what you'll need for this delightful treat:

6 Tablespoons Butter
1 Cup Self-Rising Flour
3/4 Cup White Sugar
1 and 1/2 Tablespoons Unsweetened Cocoa Powder
1/2 Cup Milk
1 Teaspoon Vanilla Extract (Flavoring)
1 Cup White Sugar
1/4 Cup Unsweetened Cocoa Powder
1 and 1/2 Cups Boiling Water

Preparation:

Now that we have all the ingredients, let's get started with the preparation!

Preheat your oven to 350 degrees F (175 degrees C).  This is an essential step in baking as it ensures that your dessert cooks evenly.  While the oven preheats, place an 8x8 baking dish in the oven and melt 6 tablespoons of butter in it.  You can do this by placing the butter in the baking dish and putting it in the oven.  Be sure to keep an eye on it to prevent the butter from burning.

Once your butter is melted and your oven is preheated, it's time to mix your dry ingredients.  In a separate bowl, stir together 1 cup of self-rising flour, 3/4 cup of sugar, and 1 1/2 tablespoons of unsweetened cocoa powder.  This mixture is the base of your chocolate cobbler and will give it its rich, chocolaty flavor.

Next, stir in 1/2 cup of milk and 1 teaspoon of vanilla extract.  The milk will help to moisten the flour and sugar, while the vanilla extract will add a hint of flavor that complements the chocolate perfectly.  Stir these ingredients until they are well combined.

Spoon the batter over the melted butter in the baking dish.  Then, stir together 1 cup of white sugar and 1/4 cup of unsweetened cocoa powder.  Sprinkle the mixture over the batter.

Boil 1 1/2 cups of water, then pour it over the mixture.

Bake for 30 minutes or until it appears set.  Serve warm with ice cream.

Well . . . we were out of ice cream, but it didn't matter.  This turned out so well!  It requires ingredients most people have in the kitchen all the time, and it doesn't take long to prepare.  You can whip it together almost anytime without running to the grocery store for that one odd ingredient you never have on hand.
