Easy Chicken Enchiladas, Fully Cooked

Food definitely contributes to abundant family living and we love to eat.  I'll tell you up front that I'm not a great cook.  I've never really enjoyed it, but I'm learning to like it more and more now that our kids are all grown up and I have more time to spend in the kitchen.  The recipes I'll be sharing with you on this blog will be recipes that are easy to prepare with common ingredients. 

Easy Chicken Enchiladas


Here is what you will need:
1 10.5oz. can of condenses cream of chicken soup
1 cup of sour cream
1/2 cup of picante sauce
1/2 cup of salsa
1 TBSP butter
1 yellow onion
Pam cooking spray
4 cups of chopped cooked chicken (I cheated and used 2 bags of frozen grilled chicken.)
2 cups of Mexican blend shredded cheese 
Salt and pepper to taste
9 large soft tortillas

Instructions:
1.  Heat your oven to 350 degrees.
2.  In a medium bowl, mix together the soup, sour cream, picante sauce, and salsa.

Mix well the mixture of soup, sour cream, picante sauce, and salsa.

3.  In small frying pan, add 1 tablespoon of butter.  I use the salted butter.  When the butter is melted, add the onion, chopped.  Saute the onion in the butter until slightly browned or browned to suite your taste.  Add more butter if needed.

Saute one yellow onion in 1 TBSP of butter. Add more if needed. Brown to taste.

4.  Spray a separate large frying pan with Pam cooking spray.  Add in your cooked chicken.  Just before you think the chicken is done, stir in the sauted onion.  Cook a little longer until the chicken is browned to taste. ​

5.  Remove the chicken and onion mixture from heat.  
​6.  Stir in the mixture of soup, sour cream, picante sauce, and salsa.  Stir in 1 cup of Mexican blend shredded cheese.  Add more cheese if you want to.  Stir it all together.
​7.  Add salt and pepper to taste.

Remove chicken and onion mixture from heat. Add in the mixture of soup, sour cream, picante sauce, and salsa. Add in the shredded cheese.

Stir all the ingredients together.

8.  Spoon the mixture into large soft tortillas.  Fold the tortillas over and lay them upside down in a 9x12 baking dish.  We like the super soft Mission flour tortillas.

9.  You'll probably have a good bit of the soup mixture left over.  Spread it over the filled tortillas in the baking dish.

10.  Spread remaining Mexican blend shredded cheese over the entire dish.  Add more if you like.  We like a lot of cheese!

11.  Bake for 40 minutes or until the enchiladas are hot in the middle and the cheese is melted to taste.

12.  Serve with your favorite rice blend.

It's almost 2022 and I'm ringing in the new year at home on my couch, recovering from the the infamous COVID19 virus.  Earlier this evening, my sweet mom left a pot of her homemade soup on our porch.  I hadn't had it in a long time.  Even through my sense of taste and smell is almost gone, I could taste it well enough and it felt so good to my throat and even better to my soul.  Now I'm sitting here thinking about my January meal planning.  I'm looking for lots of winter soup recipes to try.  Here's my list.  Maybe you will want to try them too.

'Tis The Season For Cooking!

How much do we love the holidays? Honestly, between Thanksgiving, end-of-year parties, dinner parties at home, and the lead-up to Christmas, we’re blessed with a veritable treasure chest of culinary pursuits, heavily laden tables, and the bliss that comes from breaking bread with family and friends. 

But all of that wonderful food doesn’t come without a cost and we’re not talking financially. At least not in this context, rather we’re talking about that most hated of culinary currencies - the calorie!

So how do we feast our way through December and still start the new year strong? Dear reader, we may have just solved that problem for you.

FIRST, PLAN YOUR MENUS

The easiest way to navigate your way through healthy eating this December is to plan for it. Knowing what parties you’re hosting, who’ll be attending, and what you intend on doing over Christmas and the new year will help you break down what your shopping list needs to look like, and where you mean to get your supplies from.

Thanksgiving is one of my favorite days of the year.  I love to start the day watching the Macy's Thanksgiving Day Parade with my family.  Then, we head to my husband's family Thanksgiving celebration which usually begins at 2:00pm.  We spend a few hours with his brother's family, aunts, uncles, and cousins before heading to my mother's house where she hosts both my dad's side and her side of our extended family.  We spend the evening with my parents, my brother's family, aunts, uncles, and cousins before returning to our home where we collapse bone tired from the day's festivities.  That is if our adult children (and sometimes my mother and her cousins) don't talk us into an all night shopping spree.  Those all night shopping sprees were fun for a while but now I prefer to come home,  plop down in front of a Christmas movie, and shop online.  Now, let's talk about the food!  With the busy schedule I just described, I usually do all my cooking on Wednesday with a little touching up in the oven, microwave, or air fryer while we enjoy the parade on Thanksgiving morning.  My favorite contributions are chicken casserole, sweet potato soufflé, and chocolate oatmeal no-bake cookies.  Do you know what you are bringing to the Thanksgiving table this year?  If you have no idea, perhaps this list of 20 savory recipes for Thanksgiving dinner will help you decide.

Now for the main attraction, the turkey!  Are you the one who cooks the turkey for your family Thanksgiving meal?  Maybe you are cooking the turkey this year, but you've never cooked a turkey before?  Melissa at No. 2 Pencil has you covered with her yummy looking Garlic Herb Butter Turkey Thanksgiving Recipe.  I don't have to cook the turkey this year but if I did, I would try this recipe out.

Sometimes we have more than one meat offered at our Thanksgiving celebrations.  If you want to add chicken, ham, roast (or all three), then consider adding the next two recipes to your family table.

Another delicious looking salad for the Thanksgiving dinner table is this Fall Harvest Salad from Georgia at The Home Cook's Kitchen.  This salad included candied walnuts and dried cherries!   Top it off with a maple balsamic dressing.

When I came across these Cheesy Roasted Broccoli Patties from Po' Man Meals, I decided to add these as a regular table staple at my house.  We all enjoy broccoli and think these will go over well every time.  Add these to your Thanksgiving meal and also enjoy them year round.  

Is it even Thanksgiving if a Green Bean Casserole isn't on the menu?  Check out this one from Betty Crocker.

As a child, I avoided sweet potatoes as much as possible, but a an adult, I can't get enough of them.  Add a little color to the plate with these Rosemary Parmesan Roasted Sweet Potatoes from Marcie at Flavor the Moments.

If vegan is how you roll, you'll love these Savory Vegan Twice Baked Sweet Potatoes from Healthy Taste of Life.

I live in the South where collard greens are just part of life.  I'll admit that they aren't one of my favorite foods, but I like them occasionally.  My mother used to cook them often and they were almost always on my grandmother's table no matter the day of the year.  If you aren't from the south and you've never had them, here's a great recipe for you to give them a try.  Check out Southern Collard Greens from Small Town Woman.

Easy Keto Friendly Hamburger Casserole

It's almost New Year's Day!  That means lots of people will be starting a new diet plan or maybe restarting a diet plan that didn't go so well in 2020.  I'm more of a calorie counter, eat less, move more kind of person but my husband likes the keto friendly lifestyle.  I'm not a nutritionist (not even close) but I do like to find or create keto friendly recipes for my husband's benefit.  We have 4 adults living here so when I cook, I like to cook a lot at one time so we have plenty to go around and then I can freeze the leftovers.  Earlier tonight, we enjoyed an easy hamburger casserole.  I made this hamburger casserole in a 9X13 inch casserole dish like this one.  I don't know the exact protein or carb numbers but the ingredients are all keto friendly.

Easy Keto Friendly Hamburger Casserole


First, you'll need these ingredients:

2.5 Pounds of Ground Beef

1 Medium/Large Onion, Chopped

2 Tablespoons of Garlic Powder

4 Ounces of Cream Cheese

1 Tablespoon  Worcestershire Sauce

Hamburger Seasoning to Taste

Salt and Pepper to Taste

One Package of Bacon 

4 Eggs

1 Cup Heavy Whipping Cream

2 Tablespoons Mustard

2 8oz. Packages of Triple Shredded Cheddar Cheese

Pickles - Whatever You Like

Now for cooking instructions with photos:

First, pre-heat your oven to 350.  

Then, place ground beef and onions in a skillet. I LOVE my new tabletop electric skillet. I'll tell you about that shortly. Cook the ground beef and chopped onions until the ground beef is cooked thoroughly and the onions are soft.

Cook ground beef until the meat is cooked thoroughly and the onions are soft.

If your meat is not 90% lean, you will probably need to drain the excess grease after the meat and onions are cooked.

After draining your excess grease (if needed), add in the hamburger seasoning, salt, pepper, garlic, cream cheese, and Worcestershire sauce.  Cook a little longer until the cream cheese is melted.

Once the cream cheese is melted and all the ingredients are well blended (this smells soooo good), spray a 9X13 inch casserole dish with Pam cooking spray.  Then, spread the meat mixture into the bottom of the casserole dish and set aside.

Cook the bacon in a microwave (or fry it if you don't like the precooked kind) according to the package instructions.  I used the whole package.

Let the bacon cool enough so that you can handle it.  Tear it into pieces and sprinkle over the meat mixture in your casserole dish.  

You can opt to layer your favorite hamburger pickles over the bacon.  I saved ours for later.

Set aside.

In a separate large mixing bowl, combine eggs, heavy whipping cream, mustard, and one 8 oz. package of triple shredded cheddar cheese. Mix thoroughly.  Then, pour the mixture over the meat/bacon in the casserole dish.

Bake at 350 for 15 minutes.  Then, remove from oven.  Sprinkle the second 8oz. package of triple shredded cheddar cheese mixture over the top.

*Side note about the triple shredded cheddar cheese:  You don't have to have the blended cheeses.  In fact, I usually add them separately (4 ounces of sharp shredded cheddar and 4 ounces of white shredded cheddar), but just today, I found a package of blended white cheddar, sharp cheddar, and mild cheddar cheeses.  I thought this would be better so I used it instead.  I like it because the cheeses are already blended. You just poor the whole thing in.

After sprinkling the second package of triple cheddar cheese on top of your dish, place it back in the oven and bake for an additional 15 minutes or until the shredded cheddar cheese topping is bubbling and turning light brown around the edges.

Allow the dish to cool for about 5 minutes.  Then, you should be able to cut it into servings.

I hope you like cheese!  This dish tastes so good. 

I chose to leave our pickles out of the main dish because not everyone here likes them and those who do prefer different kinds.  My husband likes spicy dill pickles.  I prefer sweet pickle relish which isn't really all that keto friendly so we enjoyed our pickles off to the side.  

This recipe was a big hit so we'll be making it often.  As I enjoyed my serving, I thought of another ingredient that would make this even better - tomatoes.  I think it needs fresh cut tomatoes or perhaps I'll add a can of Rotel next time.  I'll do that soon so stay tuned.  I'll let you know how that goes.  By the way, you can use less cheese if you want.   We have no shame.  We love our cheese.  LOL

Now, about that skillet!

 For the 30 years that I've been married and cooking for my family, I have gone through several electric skillets.  Every few years, when the one I'm using has seen its last days, my mother will give me a new one as a Christmas gift.  This year was a year to get a new electric skillet.  I was with my mother, enjoying a day of Christmas shopping, when I picked this one out.  I liked it because it has a pour spout on one corner.  Today, when using it for the first time, I realized how helpful that pour spout is.  The lid is awesome!  On two corners of the lid, there are little holes that fit in that pour spout corner so when you pour out excess liquids, you don't lose any food particles.

The skillet has wider hand grips than my previous skillets.  Gripping the skillet to pour out liquids is much easier with the wider handles.  The lid has two black "pad-like" knobs on two sides.  These are called thumb pads.  You can grip the skillet while holding your thumbs on the thumb pads.  This holds the lid on securely without burning your thumbs while you handle the skillet and pour out excess liquids.

The inside of the skillet has a non-stick finish that is much better quality than my previous skillets.  I just love it.
