Easy Chicken Enchiladas
Easy Chicken Enchiladas, Fully Cooked

Food definitely contributes to abundant family living and we love to eat.  I'll tell you up front that I'm not a great cook.  I've never really enjoyed it, but I'm learning to like it more and more now that our kids are all grown up and I have more time to spend in the kitchen.  The recipes I'll be sharing with you on this blog will be recipes that are easy to prepare with common ingredients. 

Easy Chicken Enchiladas


Here is what you will need:
1 10.5oz. can of condenses cream of chicken soup
1 cup of sour cream
1/2 cup of picante sauce
1/2 cup of salsa
1 TBSP butter
1 yellow onion
Pam cooking spray
4 cups of chopped cooked chicken (I cheated and used 2 bags of frozen grilled chicken.)
2 cups of Mexican blend shredded cheese 
Salt and pepper to taste
9 large soft tortillas

Instructions:
1.  Heat your oven to 350 degrees.
2.  In a medium bowl, mix together the soup, sour cream, picante sauce, and salsa.

3.  In small frying pan, add 1 tablespoon of butter.  I use the salted butter.  When the butter is melted, add the onion, chopped.  Saute the onion in the butter until slightly browned or browned to suite your taste.  Add more butter if needed.

Saute one yellow onion in 1 TBSP of butter. Add more if needed. Brown to taste.

4.  Spray a separate large frying pan with Pam cooking spray.  Add in your cooked chicken.  Just before you think the chicken is done, stir in the sauted onion.  Cook a little longer until the chicken is browned to taste. ​

5.  Remove the chicken and onion mixture from heat.  
​6.  Stir in the mixture of soup, sour cream, picante sauce, and salsa.  Stir in 1 cup of Mexican blend shredded cheese.  Add more cheese if you want to.  Stir it all together.
​7.  Add salt and pepper to taste.

Remove chicken and onion mixture from heat. Add in the mixture of soup, sour cream, picante sauce, and salsa. Add in the shredded cheese.

Stir all the ingredients together.

8.  Spoon the mixture into large soft tortillas.  Fold the tortillas over and lay them upside down in a 9x12 baking dish.  We like the super soft Mission flour tortillas.

9.  You'll probably have a good bit of the soup mixture left over.  Spread it over the filled tortillas in the baking dish.

10.  Spread remaining Mexican blend shredded cheese over the entire dish.  Add more if you like.  We like a lot of cheese!

11.  Bake for 40 minutes or until the enchiladas are hot in the middle and the cheese is melted to taste.

12.  Serve with your favorite rice blend.

It's almost 2022 and I'm ringing in the new year at home on my couch, recovering from the the infamous COVID19 virus.  Earlier this evening, my sweet mom left a pot of her homemade soup on our porch.  I hadn't had it in a long time.  Even through my sense of taste and smell is almost gone, I could taste it well enough and it felt so good to my throat and even better to my soul.  Now I'm sitting here thinking about my January meal planning.  I'm looking for lots of winter soup recipes to try.  Here's my list.  Maybe you will want to try them too.

Keto Lemon Garlic Cinnamon Chicken

Looking for an easy keto chicken recipe?  I've got you covered.  This lemon garlic cinnamon chicken recipe is keto friendly and it only takes a short time to make it.  My husband loves a lot of spices so I loaded this recipe with them.

 Keto Lemon Garlic Cinnamon Chicken


You'll need:

2 - 4 Boneless Skinless Chicken Breasts
2 TBSP Lemon Juice
2 TBSP Chili Powder
2 TBSP Ginger Spice
2 TBSP Garlic Powder
2 TBSP Coriander Spice
2 TBSP Onion Powder
2 TBSP Cinnamon
2 TBSP Butter
1/2 Cup Heavy Cream
1 Can Rotel Tomatoes
1 Cup Chicken Broth

Instructions:

First, you'll need to dice up the chicken.  Then, in a medium size bowl, add the diced chicken and 1 TBSP each of lemon juice, chili powder, ginger spice, garlic powder, coriander spice, onion powder, and cinnamon.

Mix it all up and let it marinate for a few minutes.  Then, add 2 TBSP butter to a deep skillet.  After the butter melts, add the chicken mixture.

While stirring frequently, cook on medium heat until the chicken is cooked through.

While the chicken mixture is simmering, add to a medium size bowl 1/2 cup of heavy cream, 1 can  of Rotel tomatoes, and 1 cup of chicken broth.  Add in 1 TBSP each of lemon juice, chili powder, ginger spice, garlic powder, coriander spice, onion powder, and cinnamon.  Mix it all up and then pour the mixture over the simmering chicken.  Continue simmering for 10 or 15 minutes, stirring frequently.

It's not a  pretty dish, but trust me, it's good!

Serve with steamed broccoli.  If a keto friendly recipe is not important to you, this tastes good with mixed vegetables too.

I finally went out and bought myself an Instant Pot.  I cooked my first chicken dish in it last night and my family loved it.  I was looking for recipes that satisfy the keto diet plan that my husband and I are on.  I found a few but didn’t have the correct ingredients so I decided to modify a few things and create my own.

I used just 3 simple ingredients:

Boneless Skinless Chicken Breasts

Coconut Oil

Garlic and Onion Spice Blend

I placed 4 boneless skinless chicken breasts inside the Instant Pot.

I added 1/4 cup of coconut oil.  You can probably melt it first but I just dumped it in and rubbed it all over the top of the chicken.

Several weeks ago, my husband brought home this garlic and onion spice blend.  I sprinkled 3 Tablespoons all over the top of the coconut rubbed boneless skinless chicken breasts.

That’s it.  Throw in 4 boneless skinless chicken breasts, dump in 1/4 cup coconut oil and rub it all over.  Sprinkle on 3 Tablespoons (more if desired) of a garlic and onion spice blend.  Now, you’re ready to cook it.

Lock the Instant Pot Lid.  Make sure the pressure release is set to seal.  Then, set the timer to 35 minutes.  Follow the directions for proper and safe pressure release when the timer goes off.  If you’re using a different brand pressure cooker, follow the directions for your pressure cooker.

The result was amazing.  The chicken was SO tender.  It looked and tasted delicious.  I served it with a side of  brussel sprouts.

I like the Instant Pot a lot.  I had dinner ready in 45 minutes start to finish.  I’ve always loved my slow cookers but the Instant Pot is perfect for evenings when you get home late or you don’t feel like spending all evening in the kitchen.  You can throw your favorite ingredients in the pot and be ready to eat in less than an hour.

Honey Garlic Chicken


My idea of summer family fun is spending summer in some place other than the kitchen.  In my continual effort to find quick and easy meals, I keep depending on my slow cooker.  Last week, I discovered a honey garlic chicken recipe.  I changed it up a little bit to fit my family needs.  It’s quick, easy, and requires only a few simple ingredients that you can easily find in your local grocery store.

  First, I placed 6 boneless, skinless chicken breasts in my slow cooker.

 In a small bowl, I added the following ingredients:

3/4 Cup of Ketchup

3/4 Cup of Soy Sauce

1/2 Cup of Honey

2 Teaspoons Basil

2 Teaspoons of Garlic Powder

I mixed it all up and then poured it over the chicken.

I set my slow cooker to low for four hours.

 Here is the delicious result!

See how easy that was?  It tastes so good and my family has been asking for more almost every day since I made it.  It is shown here with white rice, but you can add brown rice and vegetables to suit your family’s taste buds.  After I took this picture, I whipped up some corn and green beans, but I forgot to take a picture before my family devoured the meal.  It really is super easy and great tasting.  The best part is that it will allow you to spend a lot more time out in the summer sun with your family.

Chicken Enchiladas Recipe

My husband and I have both endured a few minor “heart hiccups” lately. Thankfully, neither of us were diagnosed with anything serious and my husband’s “hiccup” was actually corrected. Other than the fact that we both need to drop some weight, our hearts are pretty healthy for now. We want to keep it that way so this week, I decided to try out a few heart-healthy recipes. Last night, we enjoyed Kid-Friendly Chicken Enchiladas with Black Beans and Corn. The original recipe is approved by the American Heart Association. I made a few changes due to availability of some of the ingredients, but for the most part, this recipe for chicken enchiladas is the same.

Chicken Enchiladas


You will need:
1 lb. chicken breasts, sauteed and cooled
15.5 oz canned, low sodium black beans
10 oz package frozen whole kernel corn
15 1/4 oz canned, no salt added OR low sodium corn
3 tsp salt-free mild chili powder
12 taco sized whole wheat or corn tortillas
12 toothpicks
14.5 oz canned, no salt added OR low sodium tomato paste
1/2 cup fat-free sour cream

Here is how I made our dinner:
  1.  Preheat the oven to 400 degrees.
  2. The original recipe calls for sautéed chicken.  I boiled our chicken instead and then shredded it.

 3. To the shredded chicken, add black beans.

4.  Then, add corn.

Tip:  I drained our corn, but after completing the meal, I wish I hadn’t.  The chicken was good but I would have liked the filling a little more moist.  The next time I make this, I’m not going to drain the corn.  I think this will leave the filling less dry.

5.  Add one teaspoon of chili powder.

6.  Mix it all together.  This makes the enchilada filling.

7.  Spray a baking dish with Pam.  I used a clear, glass dish.

 8.  Spoon out a desired amount of filling onto a soft tortilla.

9.  Roll up the tortilla.  Hold it in place with a toothpick.

10.  Place the desired amount of tortillas into the baking dish.

11.  Spoon out any left over filling onto the tops of the tortillas.

After I did this, I removed the toothpicks.

12.  In a separate bowl, pour in 2 teaspoons of chili powder.

13.  Add tomato paste.

I opted for diced tomatoes instead.  After completing the meal, I realized that a can or two of Rotel would have been a good choice as well.

14.  Add sour cream.

 15.  Mix it all up.

16.  Pour the mixture over the tortillas.

17.  Bake at 400 degrees until warm.  I baked our enchiladas for 20 minutes.

With the exception of one daughter who hates anything with corn in it, this was a success.  We will definitely have it again.  My husband carried some to work the next day for lunch.  He said it was good reheated too.

Tonight, we enjoyed homemade beef stew which will hopefully be the subject of my next recipe post.  Come back soon for that one!
