Fall in Georgia is absolutely gorgeous.  The weather is still warm during the day, but we can feel the coolness that comes with the change of the season early in the morning and late in the evening.  It's still a little too early to enjoy the canvas of colorful foliage God paints for us every fall, but the leaves on the trees in my yard are showing signs of sleepiness as the first yellows and golds begin to appear.  Soon, the leaves on my trees and those on the mountain slopes just over the hills will be painted with fresh burgundies, oranges, yellows, golds, browns, and reds.  One of my favorite things to do in the fall is to travel over these rolling foothills and into the Great Smokey Mountains to enjoy all the colors of fall at the seasonal peak.  It's almost time!  While we are waiting for the colorful peak, we can be thinking about other fall things to enjoy throughout the season.  Over the years, we have curated a handful of fall posts here on the Abundant Family Living Blog.  Today, we bring you Fall at Abundant Family Living from our earliest posts up to today, September 28, 2023.

Easy Chicken Enchiladas

 

Easy Chicken Enchiladas
Easy Chicken Enchiladas, Fully Cooked

Food definitely contributes to abundant family living and we love to eat.  I'll tell you up front that I'm not a great cook.  I've never really enjoyed it, but I'm learning to like it more and more now that our kids are all grown up and I have more time to spend in the kitchen.  The recipes I'll be sharing with you on this blog will be recipes that are easy to prepare with common ingredients. 

Easy Chicken Enchiladas


Here is what you will need:
1 10.5oz. can of condenses cream of chicken soup
1 cup of sour cream
1/2 cup of picante sauce
1/2 cup of salsa
1 TBSP butter
1 yellow onion
Pam cooking spray
4 cups of chopped cooked chicken (I cheated and used 2 bags of frozen grilled chicken.)
2 cups of Mexican blend shredded cheese 
Salt and pepper to taste
9 large soft tortillas

Instructions:
1.  Heat your oven to 350 degrees.
2.  In a medium bowl, mix together the soup, sour cream, picante sauce, and salsa.

Mix well the mixture of soup, sour cream, picante sauce, and salsa.

3.  In small frying pan, add 1 tablespoon of butter.  I use the salted butter.  When the butter is melted, add the onion, chopped.  Saute the onion in the butter until slightly browned or browned to suite your taste.  Add more butter if needed.

Saute one yellow onion in 1 TBSP of butter. Add more if needed. Brown to taste.

4.  Spray a separate large frying pan with Pam cooking spray.  Add in your cooked chicken.  Just before you think the chicken is done, stir in the sauted onion.  Cook a little longer until the chicken is browned to taste. ​

Add the chicken and onion together and brown to taste.

5.  Remove the chicken and onion mixture from heat.  
​6.  Stir in the mixture of soup, sour cream, picante sauce, and salsa.  Stir in 1 cup of Mexican blend shredded cheese.  Add more cheese if you want to.  Stir it all together.
​7.  Add salt and pepper to taste.

Remove chicken and onion mixture from heat. Add in the mixture of soup, sour cream, picante sauce, and salsa. Add in the shredded cheese.

Stir all the ingredients together.

8.  Spoon the mixture into large soft tortillas.  Fold the tortillas over and lay them upside down in a 9x12 baking dish.  We like the super soft Mission flour tortillas.

9.  You'll probably have a good bit of the soup mixture left over.  Spread it over the filled tortillas in the baking dish.

10.  Spread remaining Mexican blend shredded cheese over the entire dish.  Add more if you like.  We like a lot of cheese!

11.  Bake for 40 minutes or until the enchiladas are hot in the middle and the cheese is melted to taste.

We have a new printable in the shop!  Children will love learning their ABCs while coloring in their My ABC Coloring Book.  The cover page is pre-made for them.  Children can staple the pages together to make their book or parents can staple the pages together for them before they begin coloring the pages.  Each page of the booklet is dedicated to a specific letter.  

It is important for children to learn to identify the letters of the alphabet.  Sarah over at Stay at Home Educator says that in order to have true fluency in letter recognition, children must be able to do four things:

1.  Identify letter names in isolation.

2.  Identify letters in context of words.

3.  Identify letters accurately.

4.  Identify letters automatically.

We believe our "My ABC Coloring Book" will help your child master the skills needed to reach true fluency in letter recognition.

Children will trace the arrows within the letters to learn how to properly write their ABCs.  Then they will color animals or items with the same beginning sounds as each respective letter of the alphabet.  If your printer won't print on both sides of the paper or you choose not to print on both sides of the paper, you can have your children cut out or print out images of various items.  Then, they can paste the images on the back of the pages that match the beginning sounds of the items.  

While enjoying their My ABC Coloring Book, children will learn to identify letters of the alphabet, learn to write both upper case letters and lower case letters, and practice small motor skills as they color.  If your child chooses to cut and paste items to match beginning sounds, they will gain even more opportunities to practice small motor skills.

More ways to help your child learn the alphabet:

Read and play with letter blocks or magnets.

Sing alphabet songs.

Read alphabet books.

Use letter tracing books.

Label simple and easy to read items in your house using index cards.  For example, clearly write "chair" on and index card and tape it to a chair.  Label a cup, a plate, a table - you get the idea.  Ask your child to read the cards often and talk about the times.  This will help you develop a language rich environment for your child.  A child who learns to love reading will establish a skill set that will support a lifelong journey of success.
